Outdoors Holiday Recipes – Ratatouille

Nobody knows why, but food always tastes better outdoors. Whether you’re going to mountains, meadow or just the back yard cook some food and enjoy the moment. It is not difficult to organize any celebration outdoors, but everyone remember it. In Internet you can find tons of holiday recipes and a lot of them are suitable for a picnic “take-out” meal. I can recommend this tasty ratatouille.

Ratatouille with Almonds, Olives and Feta Cheese

Directions

Put one chopped onion, one or two chopped garlic cloves, basil leaves (about 1/3 bunch), olive oil (3 tablespoons) and red chili flakes (1/2 teaspoon) into the skillet over medium heat. Cook about 5 minutes until the onions start to soften. Add chopped eggplants and cook 10 more minutes, if necessary, add olive oil. Add drained capers, chopped fresh tomatoes and zucchini. Flavour with salt and paper. Continue cooking until vegetables are soft. Add canned tomatoes, some more basil leaves, vinegar and continue to cook for another 15 minutes.

Gently toast the almonds in a large skillet over medium heat for about 3 minutes. Be careful not to let them burn. Add olive oil (3 tablespoons), chili flakes 1/2 teaspoon, one chopped garlic clove, season with salt and pepper to taste. Cook for another 3 minutes. Cool and crush nuts, add crumbled feta cheese, olives, remaining basil leaves and mix properly.

Put the ratatouille into a bowl and serve with mixed almonds, olives and feta.

  • 1 medium onion
  • 3 garlic cloves
  • 1 bunch of fresh basil
  • 1 teaspoon red chili flakes
  • 5 medium Japanese eggplants
  • 1 tablespoon capers
  • 3 tomatoes
  • 3 medium zucchini
  • 1 can of peeled tomatoes
  • 1 cup of almonds
  • 1 cup of pitted green olives
  • 1 pound of feta cheese
  • 6 tablespoons extra-virgin olive oil
  • 1 tablespoon balsamic vinegar
  • salt
  • black pepper

How to Catch a Pike

First of all you need to find pike locations. Pike feed on minnows, walleye and frogs, so you’ll find pike in places which support such wildlife. Pike are a fish that can be caught in great numbers in all seasons.

In summertime pike will be in shallow water, usually bedded down in weeds, because of bright sunlight and shade which bring hunting benefit for pike-predators. In deep weeds try any hooks that look like minnows.

From one side pike is a very aggressive fish, from another side it is enough lazy to forage for a meal if it can take a free one. You can catch a pike by using small fish. But big pike would rather not waste too much time and energy chasing bugs or minnows. So, use a bigger fish to draw a greater pike.

In the fall time the pike will be feeding like crazy because they are getting ready for the up coming winter. You should be focusing on trolling. And if you find the bait fish you can be assured that you have found the pike.

Don’t be in a hurry, before a pike take your lure, it will play with it and bite several times. Leave your lure in the water even if you had the pike and lost it, it is possible that the pike will return. And you will see the float take off through the water if the pike hits your bait.

Anytime at the end of the day is a good time for fishing. Trial and error is the best way to find the fish and find out how they are reacting and to what. And the whole aim is to have fun; of course you will have more fun if you catch the pike. Good luck!
